Quick to prepare and loaded with nutrients, this salad is ideal for a healthy lunch, side dish, or light dinner.

Ingredients

Scale

For the Salad:

  • 2 oranges (navel, Cara Cara, or blood orange), peeled and sliced
  • 1 grapefruit, peeled and segmented
  • 1 ripe avocado, sliced
  • 2 cups mixed greens (arugula, spinach, or butter lettuce)
  • ¼ cup crumbled feta or goat cheese (optional)
  • ¼ cup toasted almonds or pistachios
  • 2 tbsp pomegranate seeds (optional, for extra color and sweetness)

For the Dressing:

  • 3 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  • Prepare the citrus: Peel the oranges and grapefruit, then slice them into thin rounds or segments. Remove any seeds.
  • Slice the avocado: Cut the avocado in half, remove the pit, and slice it into wedges. To prevent browning, lightly drizzle with lemon juice.
  • Assemble the salad: Arrange the mixed greens on a large plate or salad bowl. Layer the citrus slices and avocado over the greens.
  • Add toppings: Sprinkle crumbled feta (if using), toasted nuts, and pomegranate seeds over the salad.
  • Make the dressing: In a small bowl, whisk together orange juice, lemon juice, olive oil, honey, Dijon mustard, salt, and pepper until emulsified.
  • Dress the salad: Drizzle the dressing over the salad just before serving. Toss gently to combine.
  • Serve immediately and enjoy a refreshing, nutrient-packed salad!

Notes

  • For extra crunch, add sunflower seeds or candied pecans.
  • Vegan option: Omit cheese and use maple syrup instead of honey.
  • Make it a full meal: Add grilled shrimp, chicken, or quinoa for protein.
  • Storage tip: Best enjoyed fresh! If prepping ahead, store citrus and dressing separately and add avocado just before serving.
