Description

This Spicy Chicken Noodle Soup is the perfect fusion of comforting warmth and fiery flavor. Packed with tender chicken, hearty noodles, and a kick of spice, it’s ideal for chilly nights, colds, or whenever you need a flavorful boost.


Ingredients

  • 1 lb boneless skinless chicken thighs or breasts, cubed

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 12 tbsp sriracha (adjust to taste)

  • 1 tsp crushed red pepper flakes (optional)

  • 6 cups chicken broth

  • 1 cup sliced carrots

  • 4 oz egg noodles or ramen noodles

  • 1 tbsp soy sauce

  • 1 tbsp fish sauce (optional for umami)

  • Juice of 1 lime

  • Fresh cilantro, scallions, or Thai basil for garnish

  • Salt and pepper to taste


Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Cook until softened and fragrant (about 3–4 minutes).

  2. Add Chicken: Add cubed chicken to the pot. Cook until lightly browned on the outside.

  3. Build the Broth: Pour in chicken broth. Stir in sriracha, red pepper flakes, soy sauce, and fish sauce (if using). Add carrots. Bring to a boil, then reduce to a simmer for 10–15 minutes.

  4. Cook the Noodles: Add noodles and cook according to package instructions (usually 4–6 minutes).

  5. Finish and Serve: Stir in lime juice. Taste and adjust seasoning. Serve hot with fresh herbs and extra chili oil or lime wedges on the side.

Notes

  • For a creamy version, add ½ cup coconut milk during the simmer step.

  • To reduce heat, start with 1 tsp sriracha and skip the chili flakes.

 

  • Best to store broth and noodles separately to avoid sogginess.
