Ingredients
1 lb boneless skinless chicken thighs or breasts, cubed
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1–2 tbsp sriracha (adjust to taste)
1 tsp crushed red pepper flakes (optional)
6 cups chicken broth
1 cup sliced carrots
4 oz egg noodles or ramen noodles
1 tbsp soy sauce
1 tbsp fish sauce (optional for umami)
Juice of 1 lime
Fresh cilantro, scallions, or Thai basil for garnish
Salt and pepper to taste
Instructions
Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Cook until softened and fragrant (about 3–4 minutes).
Add Chicken: Add cubed chicken to the pot. Cook until lightly browned on the outside.
Build the Broth: Pour in chicken broth. Stir in sriracha, red pepper flakes, soy sauce, and fish sauce (if using). Add carrots. Bring to a boil, then reduce to a simmer for 10–15 minutes.
Cook the Noodles: Add noodles and cook according to package instructions (usually 4–6 minutes).
Finish and Serve: Stir in lime juice. Taste and adjust seasoning. Serve hot with fresh herbs and extra chili oil or lime wedges on the side.
Notes
For a creamy version, add ½ cup coconut milk during the simmer step.
To reduce heat, start with 1 tsp sriracha and skip the chili flakes.
Best to store broth and noodles separately to avoid sogginess.
