Description

This shrimp salad recipe is light, refreshing, and bursting with flavor. Made with tender shrimp, crunchy celery, red onions, and a creamy dressing, it’s the perfect dish for a quick lunch, summer gathering, or healthy meal prep. Enjoy it as a salad, in a sandwich, or wrapped in lettuce for a low-carb option.

Ingredients

Scale

For the Shrimp Salad:

  • 1 pound cooked shrimp, peeled, deveined, and chopped
  • 2 stalks celery, finely chopped
  • ¼ cup red onion, finely diced
  • 1 tablespoon fresh dill, chopped
  • Salt and black pepper, to taste

For the Dressing:

  • ¼ cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning (optional, for extra flavor)

Instructions

Step 1: Prepare the Shrimp

  • If using raw shrimp, boil in salted water for 2-3 minutes until pink and opaque. Transfer to an ice bath, then peel and chop.

Step 2: Make the Dressing

  • In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and Old Bay seasoning until smooth.

Step 3: Assemble the Salad

  • In a large bowl, combine chopped shrimp, celery, red onion, and fresh dill. Pour the dressing over the mixture and toss gently until well coated.

Step 4: Chill & Serve

  • Cover and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled as a salad, in a sandwich, or with crackers.

Notes

  • Make it Healthier: Swap mayonnaise for Greek yogurt or avocado mash.
  • Storage: Keep shrimp salad in an airtight container in the fridge for up to 3 days.

  • Spice It Up: Add a dash of hot sauce or cayenne pepper for a kick!
