Description

This refreshing non lettuce salad is packed with Mediterranean flavor—loaded with protein-rich chickpeas, crisp cucumbers, juicy tomatoes, tangy feta, and a zesty lemon-herb dressing. It’s perfect as a side, light lunch, or make-ahead meal that holds up beautifully without any leafy greens.


Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ½ cup red onion, finely chopped

  • ½ cup feta cheese, crumbled

  • ¼ cup Kalamata olives, sliced

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon red wine vinegar

  • ½ teaspoon dried oregano

  • Salt and black pepper to taste


Instructions

  • In a large mixing bowl, combine chickpeas, tomatoes, cucumber, red onion, olives, and feta cheese.

  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper.

  • Pour the dressing over the salad and toss gently to coat.

 

  • Garnish with chopped parsley and chill for 15–20 minutes before serving for best flavor.
