For the Chicken & Potatoes:

  • 2 boneless, skinless chicken breasts (cubed)
  • 3 medium potatoes (diced)
  • 2 tbsp olive oil
  • 1 tbsp butter (optional, for extra richness)
  • 3 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional, for spice)
  • ½ cup Parmesan cheese (grated)
  • ½ cup mozzarella cheese (shredded, for extra cheesiness)
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

Step 1: Prepare the Ingredients

  1. Wash and dice the potatoes into small cubes.
  2. Cube the chicken into bite-sized pieces and pat dry with a paper towel.

Step 2: Cook the Potatoes

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Add the diced potatoes, season with paprika, salt, and pepper, and cook for 10-12 minutes, stirring occasionally until crispy and golden brown.
  3. Remove the potatoes from the skillet and set aside.

Step 3: Cook the Chicken

  1. In the same skillet, add 1 tbsp olive oil and butter.
  2. Add the chicken pieces and season with Italian seasoning, red pepper flakes, and minced garlic.
  3. Cook for 6-8 minutes, stirring occasionally, until fully cooked and golden brown.

Step 4: Combine and Melt the Cheese

  1. Return the cooked potatoes to the skillet with the chicken.
  2. Sprinkle Parmesan and mozzarella cheese over the top.
  3. Cover with a lid and let the cheese melt for 2-3 minutes on low heat.

Step 5: Serve and Garnish

 

  1. Remove from heat and sprinkle fresh parsley on top.
  2. Serve hot and enjoy!
