  • ¼ cup (60g) cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt (optional)
  • 1 teaspoon honey or sugar-free sweetener (optional for sweetness)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese until completely smooth to avoid lumps.
  3. Separate the eggs into two clean bowls—egg whites in one, yolks in another.

Step 2: Whip the Egg Whites

  1. Add cream of tartar to the egg whites and beat with a hand mixer on high speed until stiff peaks form (about 3-5 minutes).

Step 3: Mix the Batter

  1. In the bowl with the egg yolks, whisk together cottage cheese, salt, and sweetener (if using).
  2. Gently fold the whipped egg whites into the yolk mixture in batches, being careful not to deflate the batter.

Step 4: Bake the Cloud Bread

  1. Spoon small mounds of batter onto the lined baking sheet, leaving space between each.
  2. Bake for 25–30 minutes until the bread is golden brown and firm to the touch.
  3. Let cool for 10 minutes before serving.

Notes

  • For a sweeter version, add vanilla extract and cinnamon.
