  • 1 cup whole milk (or heavy cream for extra richness)
  • 2 tbsp butter
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional for extra depth)
  • ½ cup shredded cheddar cheese (optional, for garnish)
  • ¼ cup crispy bacon bits (optional, for garnish)
  • 2 tbsp fresh chives or parsley, chopped (for garnish)

Instructions

  • Sauté the aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and garlic, cooking until soft and fragrant (about 3 minutes).
  • Cook the potatoes: Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • Blend for creaminess: Use an immersion blender to puree part of the soup for a creamier texture, or mash some of the potatoes with a fork while leaving chunks for a rustic feel.
  • Stir in milk and seasonings: Add the milk (or cream), salt, black pepper, and smoked paprika. Stir well and simmer for another 5 minutes.
  • Serve and garnish: Ladle the soup into bowls and top with shredded cheese, crispy bacon bits, and fresh chives or parsley. Enjoy warm!

Notes

  • Make it vegetarian: Use vegetable broth and skip the bacon.
  • Make it dairy-free: Swap milk for coconut milk or cashew cream.
