Instructions
- Sauté the aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and garlic, cooking until soft and fragrant (about 3 minutes).
- Cook the potatoes: Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Blend for creaminess: Use an immersion blender to puree part of the soup for a creamier texture, or mash some of the potatoes with a fork while leaving chunks for a rustic feel.
