Ingredients
3 cups cooked chicken, shredded or diced (rotisserie or grilled)
1 cup red grapes, halved
½ cup green grapes, halved (optional)
½ cup celery, finely chopped
½ cup mayonnaise (or Greek yogurt for a lighter version)
¼ cup chopped pecans or walnuts (optional)
1 tablespoon Dijon mustard
1 teaspoon lemon juice (optional)
Salt and black pepper, to taste
Instructions
In a large mixing bowl, add the shredded or diced chicken.
Gently fold in the halved grapes, chopped celery, and nuts if using.
In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice.
Pour the dressing over the chicken mixture and stir until well coated.
Season with salt and pepper to taste.
Cover and chill in the refrigerator for at least 1 hour before serving.
Serve on croissants, in wraps, over greens, or with crackers.
