Ingredients
Scale
For the Bread Pudding:
- 4 cups bread (brioche or French bread), cubed
- 2 ripe bananas, mashed
- 2 eggs
- 2 cups whole milk
- ½ cup heavy cream
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- ¼ cup melted butter
For the Topping:
- 1 banana, sliced
- ¼ cup caramel sauce (optional)
- ½ cup chopped walnuts or pecans (optional)
Instructions
Step 1: Prepare the Bread & Bananas
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch baking dish with butter or non-stick spray.
- Place the cubed bread in the dish and sprinkle the mashed bananas evenly over it.
Step 2: Make the Custard Mixture
- In a large mixing bowl, whisk together eggs, milk, heavy cream, sugars, vanilla, cinnamon, nutmeg, and salt.
- Slowly add the melted butter while whisking to incorporate.
Step 3: Assemble & Bake
- Pour the custard mixture evenly over the bread and bananas, pressing the bread down so it soaks up the liquid. Let it sit for 10 minutes.
- Top with sliced bananas and bake for 40-45 minutes, or until the top is golden brown and the custard is set.
Step 4: Serve & Enjoy
- Let the pudding cool for 10 minutes before serving.
- Drizzle with caramel sauce and sprinkle with nuts for extra flavor.
Notes
- For extra richness, substitute half-and-half for the milk.
- If you prefer a firmer pudding, bake for an additional 5-10 minutes.
- Serve warm with whipped cream, ice cream, or a dusting of powdered sugar.
