Ingredients
Dry Ingredients:
- 2 cups all-purpose flour (or whole wheat for a healthier version)
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
Wet Ingredients:
- 2 large ripe bananas, mashed
- 1 cup apple, peeled and finely diced (Honeycrisp, Fuji, or Granny Smith)
- ½ cup granulated sugar (or coconut sugar for a refined sugar-free option)
- ¼ cup brown sugar
- ½ cup unsalted butter, melted (or coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup milk (or almond milk for dairy-free)
Optional Add-ins:
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- ½ teaspoon nutmeg for extra warmth
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
In a large bowl, mash the bananas until smooth. Stir in the melted butter, sugar, brown sugar, eggs, vanilla, and milk until well combined.
Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix! Fold in the diced apples and any optional add-ins like nuts or chocolate chips.
Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
Notes
For extra moisture, replace half the butter with unsweetened applesauce.
Prefer a stronger apple flavor? Add ¼ cup grated apple in addition to diced pieces.
Storage: Keep at room temperature for 3 days or refrigerate for a week in an airtight container.
Freeze for later! Wrap slices individually and freeze for up to 3 months.
