  • 1 lb (450 g) ground beef

  • 1 can (15 oz / 425 g) black or kidney beans, drained and rinsed

  • 1 can (15 oz / 425 g) corn, drained

  • 1 can (14.5 oz / 410 g) diced tomatoes with green chiles (like Rotel)

  • 1 packet (1 oz / 28 g) taco seasoning mix


Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.

  2. Add the beans, corn, diced tomatoes with green chiles, and taco seasoning to the pot. Stir to combine.

  3. Optional: Add ½ cup water or broth if you prefer a thinner consistency.

  4. Bring to a simmer and cook for 15–20 minutes, stirring occasionally.

  5. Serve hot with your favorite toppings like shredded cheese, sour cream, avocado, or tortilla chips.

Notes

  • For a creamy twist, stir in a few tablespoons of cream cheese or heavy cream before serving.
